Cannelloni with Tomato Eggplant Sauce

Here’s a great recipe for cannelloni that is remarkably easy to make. Oven-ready pasta is filled with ricotta and baby spinach and bathed in a tomato eggplant sauce. Add some crusty bread and a salad of roasted peppers or crisp greens for a terrific meal.

 

 

Cannelloni with Tomato Eggplant Sauce

Ingredients
  1. Best in a large (minimum 5 quart) slow cooker
  2. Sauce
  3. 2 tbsp olive oil 25 mL
  4. 1 medium eggplant, peeled, cut into 2-inch (5 cm) cubes, and drained of excess moisture
  5. 2 cloves garlic, minced 2
  6. 1⁄4 tsp freshly ground black pepper 1 mL
  7. 3 cups tomato sauce 750 mL
  8. Filling
  9. 2 cups ricotta cheese 500 mL
  10. 1⁄2 cup freshly grated Parmesan cheese 125 mL
  11. 11⁄2 cups chopped baby spinach 375 mL
  12. 1 tsp freshly grated nutmeg 5 mL
  13. 1 egg, beaten
  14. 1⁄4 tsp salt 1 mL
  15. 1⁄4 tsp freshly ground black pepper 1 mL
  16. 24 oven-ready cannelloni shells 24
Instructions
  1. 1. Sauce: In a skillet, heat oil over medium heat for 30 seconds. Add eggplant, in batches, and cook, stirring, until it begins to brown. Return all eggplant to pan. Add garlic and black pepper and cook, stirring, for 1 minute. Add tomato sauce, stir well and bring to a boil. Remove from heat and set aside.
  2. 2. Filling: In a bowl, combine ricotta, Parmesan, spinach, nutmeg, egg, salt and pepper. Using your fingers, fill pasta shells with mixture and place filled shells side by side in slow cooker stoneware, then on top of each other when bottom layer is complete. Pour sauce over shells.
  3. 3. Cover and cook on Low for 8 hours or on High for 4 hours, until hot and bubbly.
Notes
  1. Make ahead
  2. This dish can be partially prepared before it is cooked. Complete Steps 1 and 2, letting tomato sauce cool before pouring over cannelloni. Refrigerate overnight in slow cooker stoneware. The next morning, continue with the recipe.
  3. Tip
  4. Be sure to use oven-ready cannelloni in this recipe. It is a great time saver and it cooks to perfection in the slow cooker.
